The Sweet Iron bits are made of steel and have the recognizable blue color. Sweet Iron develops surface rust through contact with (air) moisture, which tastes sweet and naturally stimulates the horse's saliva production. As a result, the horse will foam more, leading to better acceptance of the bit. This rusting process (oxidation) changes the blue color of the bits to brownish-gray. This is a desired effect of the Sweet Iron bits. When not using a Sweet Iron bit temporarily, an orange-brown rust layer may form on the mouthpiece. This can be easily removed by wiping the bit with a damp cloth. Sweet Iron bits have the most variations in mouthpieces, each with its own specific action.
